Ingredients
1 cup Butter
1 medium Onion
2 cloves Garlic
4 cups Broccoli
1 medium Carrot
4 cups Chicken stock
2 cups Half-and-half cream
2 leaves Bay leaves
1 teaspoon Salt
1/4 teaspoon Ground nutmeg
1/2 teaspoon Pepper
2 tablespoons Cornstarch
1/4 cup Water
2 cups Shredded cheddar cheese
6 small Round bread loaves
Optional toppings
Instructions
Melt butter in a stockpot over medium heat, sauté onion and garlic until soft, about 6-8 minutes.
Add broccoli, carrot, chicken stock, half-and-half, and seasonings. Bring to a boil.
Reduce heat to simmer, cook for 10-12 minutes until veggies are tender.
Mix cornstarch with water until smooth, stir into soup, bring to a boil until thickened.
Remove bay leaves, gradually stir in cheddar cheese until melted.
If using bread loaves, hollow out the centers, ladle in soup just before serving.
Ladle into bowls or bread bowls, top with bacon, extra cheese, pepper, or nutmeg.
Chef's tips
Grate your own cheddar cheese for the smoothest melting and richest flavor instead of using pre-shredded cheese which contains anti-caking agents.
Add the cheese gradually while stirring constantly off the heat to prevent the soup from becoming grainy or breaking.
For extra depth of flavor, roast the broccoli florets in the oven for 15 minutes before adding them to the soup.
