Instructions
Trim the ends off the brussels sprouts and halve small to medium ones; cut larger ones into thirds so everything is roughly the same size. Pile them into a large bowl.
Drizzle the olive oil and balsamic vinegar over the sprouts, moving your hand around the bowl as you pour so it lands everywhere instead of soaking one or two. Season with the salt, a few grinds of black pepper, and the garlic powder if you're using it.
Toss thoroughly with your hands or a spoon for a good 30 seconds, until the bowl is dry and every piece is slicked with the oil and vinegar. If a few look bare, add another splash of oil.

Don't crowd the basket. Two thin layers cook up crisp; a deep pile steams. Cook in batches if your air fryer is small.
Save any loose outer leaves that fall off and scatter them in during the last 4 minutes — they turn into crisp chips.
For softer centers, boil the cut sprouts for 3 minutes, drain and pat very dry, then toss and air fry as written.
