Most white hot chocolate tastes like hot sugar. This one is built like a ganache instead of a syrup: real cocoa-butter white chocolate emulsified into scalded milk and cream, with toasted milk powder and scraped vanilla bean doing the heavy lifting. The toasting step adds a caramelized, almost dulce-de-leche depth that keeps the sweetness in check, and a real pinch of salt makes it taste finished rather than cloying. It pours thick enough to coat the cup — serve it in small portions, espresso-bar style.

Instructions

  1. Toast the milk powder: spread the 3 tablespoons of dry milk powder in a dry skillet over medium-low heat. Stir and shake constantly for 4 to 6 minutes, until it turns the color of light peanut butter and smells like toasted caramel. It goes from golden to burnt fast, so pull it the moment it smells nutty and scrape it onto a plate to cool.
  2. Put the chopped white chocolate in a medium heatproof bowl. Chop it finer than you think you need to — white chocolate is soft and needs to melt quickly and evenly to stay emulsified.
  3. In a heavy saucepan, combine the milk, cream, toasted milk powder, the scraped vanilla seeds and the empty pod, the salt, and the nutmeg or cardamom if using. Warm over medium heat, whisking, until it steams and reaches 170°F (small bubbles at the edges, no boil), about 5 to 6 minutes. Remove from heat, cover, and steep 5 minutes.
  4. Fish out the vanilla pod. Pour about one-third of the hot milk over the white chocolate and let it sit undisturbed for 60 seconds, then whisk from the center outward until you have a thick, glossy paste. Add the remaining milk in two more additions, whisking smooth after each — this staged emulsion is what gives the drink body instead of a thin, grainy texture.
  5. For a café-quality texture, buzz the mixture with an immersion blender for 20 to 30 seconds (or blend in a regular blender with the lid vented). It should thicken slightly and build a fine cap of foam.
  6. Return everything to the saucepan and warm over low heat, whisking, just to 160°F to 165°F for serving. Do not let it approach a simmer — white chocolate scorches and can split above about 175°F.
  7. Pour into 4 small cups or 6-ounce mugs. Top each with a spoonful of soft whipped cream, a shower of grated white chocolate, and a few grains of flaky salt. Serve immediately with a spoon.
