Uncover and stir gently from the bottom up, breaking any large sausage pieces in half; the sausage should be cooked through (165°F/74°C) and the gnocchi tender. If the sauce looks tight, stir in 2–3 tablespoons of hot water.
Scatter over the mozzarella and parmesan and bake uncovered for 15–18 minutes, until the cheese is melted with browned patches and the edges bubble. For a darker top, broil for 1–2 minutes, watching closely.
Rest 10 minutes so the sauce thickens, then scatter with torn basil and serve straight from the dish.
Chef's tips
Shelf-stable vacuum-packed gnocchi from the pasta aisle is essential here — frozen gnocchi releases too much water and refrigerated fresh gnocchi turns soft in the long bake.
Reheat portions covered at 350°F (175°C) for 20 minutes, or microwave with a splash of milk stirred in; it keeps 4 days in the fridge.
