A whole Japanese-style dinner on one tray: sweet potato wedges roast until caramelised, then green beans and miso-glazed salmon join them for the last 12 minutes. The glaze bubbles into a savoury-sweet lacquer, the pan juices coat the vegetables, and there is exactly one thing to wash.
Ingredients

1.5 lb sweet potatoes, scrubbed and cut into 3/4-inch wedges
12 oz green beans, trimmed
2 tbsp neutral oil, such as canola
1 tsp kosher salt
4 fillets skin-on salmon fillets (about 6 oz each)
Miso glaze
3 tbsp white miso
2 tbsp mirin
1 tbsp soy sauce
2 tsp toasted sesame oil
1 tbsp finely grated fresh ginger
To finish
3 scallions, thinly sliced
1 tbsp toasted sesame seeds
Instructions
Heat the oven to 425°F (220°C) and line a large rimmed sheet pan with parchment. Toss the sweet potato wedges with 1 tablespoon of the oil and 3/4 teaspoon of the salt, spread them cut-side down over two-thirds of the pan, and roast for 18 minutes.
While the potatoes roast, whisk the miso, mirin, soy sauce, sesame oil and grated ginger in a small bowl until smooth and pourable. Pat the salmon fillets very dry and toss the green beans with the remaining 1 tablespoon oil and 1/4 teaspoon salt.
Pull the pan out and flip the sweet potatoes. Pile the green beans onto the empty third of the pan, then nestle the salmon fillets skin-side down among the vegetables, making a little space for each so nothing steams. Spoon the miso glaze thickly over the tops of the salmon fillets.
Return the pan to the oven and roast 12 to 14 minutes, until the glaze is bubbling and darkened at the edges, the beans are blistered and tender, and the salmon flakes at the thickest part (125°F / 52°C for just-cooked, 135°F / 57°C for firm).
Let the pan rest 2 minutes, then scatter the scallions and sesame seeds over everything and serve straight from the tray, spooning the glazy pan juices over the sweet potatoes and beans.
Chef's tips
Cut the sweet potatoes no thicker than 3/4 inch — thicker wedges won't be tender in time for the salmon.
Miso scorches fast, so glaze only the tops of the fillets, not the pan. If you want a darker lacquer, broil for the final 60 to 90 seconds and watch it closely.
Skinless salmon, or thick cod or halibut fillets, work the same way; add 2 minutes for fish over 1 1/2 inches thick.
Leftover glaze keeps a week in the fridge and is excellent brushed on roast chicken thighs.
