Instructions
Set a large skillet over medium-high heat and add the ground beef. Break it up with a wooden spoon as it cooks, about 4 minutes. If a pool of fat collects in the pan, tip it off — with lean beef you may not need to.
While the beef is still a little pink in places, stir in the chopped onion and bell pepper. Keep cooking and stirring for 3 to 4 minutes, until no pink remains in the meat and the vegetables have softened at the edges.
Add the garlic and stir for 30 seconds, just until you can smell it, then turn the heat down to medium-low.
Pour in the tomato sauce and ketchup, then add the brown sugar, Worcestershire sauce, mustard, salt and pepper. Stir everything together well.
Let the mixture simmer gently for about 10 minutes, stirring now and then, until it's thick enough to sit on a bun without running off. Taste and adjust the salt.
Toast the hamburger buns, spoon the filling generously onto the bottom halves, cap them and serve right away.
Chef's tips
Chop the onion and pepper small — around 1/4 inch — so they melt into the sauce and disappear for pepper-suspicious kids.
Toasting the buns isn't optional here; it's the only thing standing between the sauce and a soggy bottom bun.
The filling thickens as it cools and reheats beautifully, so make a double batch and keep half for lunches. It freezes well for up to 3 months.
If your crowd likes it sweeter, add another teaspoon of brown sugar; a splash of water loosens the sauce if it reduces too far.
