Instructions
Place the dried wood ear mushrooms in a bowl, cover with 2 cups of very hot tap water, and soak 15 minutes until fully softened and springy. Drain, trim off any hard nubs, and slice into thin strips.
Meanwhile, toss the pork matchsticks with 2 teaspoons soy sauce, 1 teaspoon sesame oil and 1/4 teaspoon white pepper. Let sit at room temperature while you prep the vegetables.
Heat the avocado oil in a large pot or Dutch oven over medium-high heat until it shimmers, about 1 minute. Add the ginger and garlic and stir constantly for 30 seconds, just until fragrant, then add the sliced shiitakes and cook 4 to 5 minutes, stirring occasionally, until they have released their liquid and started to brown at the edges.
Pour in the chicken broth and add the wood ears and bamboo shoots. Bring to a gentle boil over high heat, then reduce to a steady simmer and cook 8 minutes so the mushrooms perfume the broth.
