Ground beef simmered in a tangy tomato-mustard sauce with sweet onion and bell pepper — a one-skillet weeknight dinner that piles onto soft buns. Mild, saucy and ready in about 35 minutes.

1 small yellow onion, diced
1 small bell pepper, diced (any colour)
2 lb lean ground beef or ground turkey
3 cloves garlic, minced

6 oz can tomato paste
3/4 cup water
2 tbsp yellow mustard or Dijon mustard
1 tbsp apple cider vinegar
1/2 tsp smoked or sweet paprika
1/2 tsp fish sauce (or coconut aminos or tamari)
1-2 tsp fine salt
1/4 tsp black pepper

buns or baked sweet potatoes (optional)
Instructions
Set a large skillet over medium to medium-high heat. Once it's hot, add the oil along with the diced onion and bell pepper. Cook, stirring now and then, for about 5 minutes, until the onion turns translucent and starts to soften.
Add the ground beef and minced garlic. Break the meat apart with a wooden spoon and cook, stirring occasionally, for 10 to 12 minutes, until browned and nearly cooked through. Spoon off excess fat if you like.
Stir in the tomato paste, water, mustard, vinegar, fish sauce, paprika, 1 teaspoon salt and the black pepper. Mix until everything is evenly coated and the paste has loosened into a sauce.
Keep cooking over medium heat for about 10 minutes, stirring occasionally, until the sauce is thick and glossy, the beef is cooked through and the peppers are tender.
Taste and add more salt and pepper as needed. Spoon generously onto buns or over split baked sweet potatoes and serve right away.
Chef's tips
The fish sauce isn't there to taste fishy — it adds a savoury depth that makes the sauce taste slow-simmered. Tamari or coconut aminos do the same job if that's what you have.
Start with 1 teaspoon of salt and build up. Tomato paste concentrates as it cooks, so it's easier to add than to fix.
If the mixture looks too thick to scoop, splash in water a tablespoon at a time until it's saucy but still holds on a bun.
Leftovers keep in a covered container in the fridge for up to 4 days and freeze for up to 3 months — reheat gently with a splash of water.
