Salmon and broccoli roast side by side under a pour of garlicky lemon butter, so the fish stays silky and the broccoli edges go crisp and browned. It's on the table in under half an hour with one pan to wash.
Ingredients
Lemon Garlic Butter
1/3 cup salted butter, melted
5 small garlic cloves, pressed
2 tablespoons fresh parsley, minced
1/2 lemon, zested and juiced
Sheet Pan
12 ounces wild Alaskan salmon fillet
9 ounces fresh broccoli, cut into florets
3 lemon slices
Instructions
Heat your oven to 425°F and lightly coat a rimmed baking sheet with nonstick spray.
Stir the pressed garlic, minced parsley, lemon zest and lemon juice into the melted butter. Set it aside while you arrange the pan.
Lay the salmon fillet on one half of the sheet pan and pile the broccoli florets on the other half. Pour half the lemon butter over the salmon and the rest over the broccoli, then toss the florets with your hands or tongs until every piece is glossy. Lay the three lemon slices across the salmon.
Roast for 15 minutes, until the salmon flakes easily when you press a fork into the thickest part (about 130°F internally) and the broccoli tips are lightly charred.
Divide the salmon and broccoli between plates and spoon any buttery juices from the pan over the top.
Chef's tips
Cut the broccoli florets on the larger side — small pieces can scorch in the time the salmon needs.
If your fillet is thin at the tail end, fold that flap under itself so the whole piece cooks at the same rate.
Pat the salmon dry before it hits the pan; a dry surface takes on colour instead of steaming.
Line the sheet with foil if you want zero scrubbing, but skip parchment near the broiler-hot edges of a 425°F oven if your paper isn't rated that high.
