Everything kids love about pizza, in one skillet of saucy pasta under a blanket of melted mozzarella. Ground beef, jarred marinara and penne all cook together in the same pan, so there's no colander and no second pot. Mild, cheesy and on the table in about 35 minutes.

1 lb ground beef
1 tsp garlic powder
1 tsp dried oregano

24 oz jarred marinara sauce
2 1/2 cups water
12 oz penne pasta

Instructions
Heat the olive oil in a large deep skillet or braiser over medium-high heat for 1 minute. Add the ground beef and cook 6 to 7 minutes, breaking it into small crumbles with a wooden spoon, until no pink remains. Tip off any excess fat.
Stir in the garlic powder, oregano and salt and cook 30 seconds so the seasonings toast into the meat.
Pour in the marinara sauce and the water, then stir in the dry penne so every piece is submerged. Bring to a strong simmer over high heat.
Reduce the heat to medium-low, cover, and simmer 14 to 16 minutes, stirring every 4 to 5 minutes so nothing sticks to the bottom, until the pasta is tender and the sauce has thickened around it. If it looks tight before the pasta is done, add a splash more water.
Turn off the heat and smooth the top. Scatter over the mozzarella and parmesan, cover again, and let stand 4 to 5 minutes until the cheese is fully melted and stringy. (For a browned top, slide the uncovered skillet under a broiler 6 inches from the element for 2 to 3 minutes instead.)
Let the skillet rest 5 minutes before scooping into bowls, so the sauce clings to the pasta rather than pooling.
Chef's tips
Swap the beef for ground turkey or chicken, or leave the meat out entirely and stir in a can of drained white beans at step 3 for a meat-free version.
Picky eaters won't notice a finely grated small zucchini or carrot added with the sauce in step 3 — it melts right into the tomato.
Older kids often like sliced pepperoni or mini turkey pepperoni tucked under the cheese before it melts; add it to just one half of the pan if the rest of the table wants it plain.
Leftovers reheat well: add a tablespoon of water per portion and microwave, covered, for 2 minutes.
