Juicy cubes of pork shoulder marinated in lemon, garlic and oregano, then blasted in the air fryer until the edges char like a proper souvlaki grill. Sweet red onion wedges go in halfway so everything finishes in one basket — no skewers, no pans, no second appliance. Dinner in about half an hour, and the whole thing tastes like a Greek taverna.
Ingredients
Pork and marinade
1.5 lb boneless pork shoulder, cut into 1-inch cubes
3 tbsp olive oil
1 lemon, zested and halved
3 cloves garlic, finely grated or minced
1 tbsp dried oregano
1 tsp salt
0.5 tsp black pepper
For the basket
1 medium red onion, cut into 1-inch wedges
Instructions
In a bowl, toss the pork cubes with the olive oil, lemon zest, juice of half the lemon, garlic, oregano, salt and pepper until every piece is coated. Let it sit at room temperature for 15 minutes while the air fryer heats (or cover and refrigerate up to 8 hours).
Preheat the air fryer to 400°F for 3 minutes.
Add the pork to the basket in a single layer, shaking off any pooled marinade, and cook at 400°F for 8 minutes. Work in two batches if the cubes overlap — crowding steams the pork instead of charring it.
Scatter the red onion wedges over the pork, shake the basket well, and cook another 6 to 8 minutes at 400°F, until the onion is softened at the edges and the pork is browned and reaches 145°F on an instant-read thermometer.
Tip everything into a serving bowl, squeeze over the juice of the remaining lemon half, toss, and rest 3 minutes before serving with warm pita or a simple tomato-cucumber salad.
Chef's tips
Pork shoulder is the right cut here — its fat keeps the cubes juicy under the air fryer's dry heat. Loin or tenderloin will dry out in the same time.
No pork? Swap in 1.5 lb boneless chicken thighs, cut the same size, and cook to 175°F (about the same timing).
For a quick dip, stir a squeeze of lemon and a pinch of the oregano into plain Greek yogurt while the pork cooks.
