Instructions
If you're freezing your own mango, peel 3 ripe mangoes, cut the flesh off the pits into 1-inch chunks, spread on a parchment-lined sheet pan, and freeze at least 4 hours or overnight. Store-bought frozen mango chunks work just as well — let them sit on the counter 5 minutes so the blender isn't fighting rock-solid cubes.
Add the liquids to the blender jar first: orange juice, yogurt, lime juice, honey, and the pinch of salt (plus coconut milk and cardamom or ginger, if using). Liquids on the bottom pull the frozen fruit down into the blades instead of letting it jam above them.
Add the frozen mango on top. Blend on low for 20 to 30 seconds until the chunks break down and start moving, then increase to high and blend 45 to 60 seconds more, until completely smooth with no fibrous flecks.

Chef's tips
Ataulfo (honey) mangoes give the smoothest, least stringy result. Common Tommy Atkins mangoes are more fibrous — blend an extra 30 seconds if that's what your bag contains.
Freeze the yogurt in an ice cube tray and use it in place of half the fresh yogurt for an even thicker, near-frozen-custard texture.
For a dairy-free version, swap the yogurt for coconut milk yogurt and keep the orange juice — the acidity is what keeps it from tasting flat.
Half a frozen banana adds body and natural sweetness, but it will mute the mango; use it only if your fruit is very sour.
