Every good part of a taco stacked into one 13x9 dish: refried beans, taco-seasoned cream cheese, guacamole, salsa, cheese, olives and fresh tomato. No baking, no reheating, and it goes straight from the fridge to the table with a bag of chips.
Ingredients
16 ounces canned refried beans
8 ounces sour cream
8 ounces cream cheese, softened to room temperature
3 tablespoons taco seasoning (1 packet)
10-12 ounces guacamole
16 ounces chunky salsa
2 cups shredded Mexican cheese blend
2.25 ounces sliced black olives, drained
2-3 Roma tomatoes, diced
Instructions
Spoon the refried beans into a 13x9-inch dish and spread them into one even layer all the way to the corners. If the beans are stiff, stir them in a bowl with a spoon for a few seconds first so they spread without dragging.
In a bowl, beat the softened cream cheese with the sour cream and taco seasoning until completely smooth and no lumps remain, about 1-2 minutes.
Dollop the cream cheese mixture over the beans and spread it gently into an even layer, working from the center outward so the beans stay put.
Spread the guacamole over the cream cheese layer, then spoon the chunky salsa over the guacamole and smooth it out.
Scatter the shredded cheese evenly over the top, then finish with the drained black olives and diced tomatoes.
Serve right away with tortilla chips, or cover and chill up to 3 days. Let it sit out 15-20 minutes before serving so the layers soften.
Chef's tips
Take the dip in the dish it was assembled in, covered tightly, and add the tomatoes and olives once you arrive so they stay bright and the top doesn't weep.
A clear glass dish shows off the layers - worth it if you're setting it on a buffet table.
If your salsa is watery, drain it in a sieve for 5 minutes first so the layers stay distinct.
Doubling for a big crowd? Use two 13x9 dishes rather than one deep pan - shallow layers scoop much better.
