Ground beef, red potatoes and green beans sealed in foil and cooked straight in the coals until everything is tender and savoury. One packet per person, no pot to scrub, and dinner comes with its own plate.

2 cups red potatoes, sliced and halved (about 6 potatoes)
2 cups fresh or frozen green beans, trimmed
1/4 cup onion, diced
1 lb lean ground beef
olive oil cooking spray
heavy-duty aluminium foil

1/2 tbsp dried rosemary
1/2 tbsp garlic salt
1/2 tbsp fennel seed
shredded cheddar cheese, optional
Instructions
Get your fire or grill to medium-high heat with a good bed of coals, or heat an oven to 400°F (200°C) if you're cooking at home. Tear four large squares of heavy-duty foil, roughly 12 inches each, and coat the centre of every one with olive oil spray.
Divide the potatoes, green beans and diced onion evenly between the four foil squares, piling them in the middle so the edges stay free for folding.
Shape the ground beef into 4 equal balls and set one on top of the vegetables in each packet. Scatter the rosemary, garlic salt and fennel seed evenly over all four.
Bring the opposite edges of the foil together and fold them over two or three times, then roll in the ends to seal each packet tightly with a little air space inside.
Cook the packets on the grate or nestled in the coals for 45 minutes to 1 hour, turning once halfway, until the potatoes are tender and the beef reaches 165°F (74°C) in the centre. Open carefully, letting the steam escape away from your face, and top with shredded cheddar if you like.
Chef's tips
Double-wrap each packet if you're setting them directly on coals — a single layer tears easily when you turn them.
Slice the potatoes no thicker than 1/4 inch. Anything chunkier will still be firm when the beef is done.
Assemble and season the packets before you leave home, then keep them in the cooler and drop them straight onto the fire at camp.
Press the beef balls into thick patties instead if you want them to cook a few minutes faster.
