Instructions
Heat the oven to 425°F and set a rack in the upper third. Line a rimmed half-sheet pan (18x13 inches) with foil or parchment for easy cleanup.
Make the queso: melt the butter in a medium saucepan over medium heat. Whisk in the flour and cook 60 to 90 seconds, until it smells faintly nutty but has taken on no color.
