Everything goes into one baking dish raw — rinsed short-grain rice, savoury soy-mirin broth, mushrooms, carrot and chicken thighs — then the oven does the work. Fifty minutes under foil gives you tender, buttery rice that has soaked up all the chicken juices, finished with scallions and sesame. It feeds six, needs almost no hands-on time, and reheats beautifully all week.
Heat the oven to 375°F (190°C). Rinse the rice in a sieve under cold water for about 30 seconds, until the water runs mostly clear, then shake it dry.
In a 9x13-inch baking dish, whisk together the chicken broth, soy sauce, mirin, grated ginger and sesame oil. Add the drained rice, grated carrot and sliced mushrooms and stir to combine, then spread everything into an even layer.
Scatter the chicken pieces evenly over the surface, pressing them lightly into the liquid but not burying them. Dot the butter cubes over the top.
Cover the dish tightly with foil, sealing the edges well, and bake for 50 minutes, until the rice has absorbed the liquid, the grains are tender and the chicken reaches 165°F (74°C) at the thickest piece.
Uncover, scatter the frozen peas over the top, re-cover with the foil and let the dish rest out of the oven for 10 minutes — the peas will heat through and the rice will finish steaming.
Fluff the rice with a fork, folding the chicken and peas through. Top with sliced scallions and sesame seeds and serve straight from the dish.
Chef's tips
Seal the foil tightly — any steam that escapes means dry, crunchy rice. If the grains are still firm at 50 minutes, add 2 tablespoons of hot water, re-cover and bake 8 minutes more.
Long-grain rice works too: use jasmine or basmati and cut the broth back to 2 1/2 cups.
Leftovers keep 4 days in the fridge. Reheat portions in the microwave with a splash of water and a lid to bring the rice back to soft.
Swap half the cremini for sliced fresh shiitake for a deeper, more traditional takikomi flavour.
