A whole dinner out of one air fryer basket: green beans blister first, then salmon fillets go in under a sticky miso-honey glaze that caramelises in minutes. Twenty minutes start to finish, one thing to wash, and no stove or oven involved.
Ingredients
Basket
4 fillets skinless salmon fillets (about 6 oz / 170 g each)
12 oz green beans, trimmed
2 tsp toasted sesame oil
Miso-Honey Glaze
3 tbsp white miso paste
2 tbsp honey
1 tbsp soy sauce
1 tbsp rice vinegar
To Finish
2 tbsp toasted sesame seeds
Instructions
Preheat the air fryer to 400°F (200°C) for 3 minutes. While it heats, stir the miso, honey, soy sauce and rice vinegar together in a small bowl until completely smooth — it will look thick at first, then loosen into a glossy glaze.
Toss the green beans with the sesame oil and spread them in the basket in as even a layer as you can. Air fry at 400°F (200°C) for 5 minutes, shaking the basket once halfway, until they are bright green with a few blistered spots.
Push the beans to the outer edges of the basket to clear four gaps in the middle. Pat the salmon dry, sit the fillets in the gaps, and brush the tops and sides generously with about two-thirds of the glaze.
Air fry at 400°F (200°C) for 7 to 9 minutes, brushing the fillets with the remaining glaze at the 5-minute mark. The salmon is done when the glaze is bubbling and darkened at the edges and the thickest part reads 125–130°F (52–54°C); add 1 to 2 minutes for very thick fillets.
Let the basket sit for 2 minutes, then lift the salmon and beans onto plates, spoon over any glaze pooled in the basket, and scatter with the sesame seeds.
Chef's tips
If your glaze is scorching before the fish is done, your basket sits close to the element — drop the heat to 375°F (190°C) and add 2 minutes.
Frozen green beans work: use them straight from the freezer but give them 8 minutes in step 2 instead of 5, so they dry out and blister rather than steam.
Line the basket with a small piece of perforated parchment under the salmon only (leave the beans on the mesh) if you are worried about the sticky glaze welding on.
Miso brands vary in saltiness — taste the glaze before brushing and add a teaspoon more honey if yours is very sharp.
