  2. Whisk the egg yolk, Dijon, 1 teaspoon of the lemon juice and 1/4 teaspoon salt in the bowl for about 20 seconds, until glossy and slightly lightened in color.
  3. Start the emulsion: whisking constantly, add the oil literally drop by drop for the first 2 tablespoons — this is the only part that can break. When the mixture visibly thickens and holds a whisk track, move to a thin, steady thread of oil, whisking the whole time. Total time is 3 to 4 minutes and you'll finish with a stiff, pale mayonnaise that mounds on the whisk. If it ever looks loose or oily, stop adding oil and whisk hard for 15 seconds to bring it back.
  4. Whisk in the remaining 1 teaspoon lemon juice, the white wine vinegar and the Worcestershire. The base will slacken slightly — that's correct.
  5. Whisk in the sour cream, grated garlic, onion powder, garlic powder, 1/2 teaspoon salt, black pepper and cayenne until completely smooth with no streaks of sour cream.
  6. Add the buttermilk in three additions, whisking smooth after each. Adding it gradually keeps the emulsion tight instead of thin and watery. You should have a pourable-but-clingy dressing that coats the back of a spoon.
  7. Fold in the dill, chives and parsley with a spatula rather than the whisk, so the herbs stay in visible flecks instead of bruising into a green haze.
  8. Cover and refrigerate at least 1 hour before serving — the powders need time to hydrate and the garlic to mellow. Taste cold and adjust: another pinch of salt for savoriness, a few drops of vinegar if it tastes flat. Store in a sealed jar in the fridge for up to 1 week; whisk or shake before each use.
