Sausage, potatoes, peppers and eggs all cooked in a single cast iron skillet over live fire, finished with melted sharp cheddar and chives. It's the breakfast that makes waking up in a tent worth it.
Ingredients
1/4 lb country sausage
1/4 cup golden potatoes, chopped
1/4 cup bell pepper, chopped
1/4 cup red onion, chopped
3 tbsp butter
3 eggs
1/4 cup sharp cheddar cheese, shredded
handful of chives, chopped
Instructions
Light a bed of hardwood lump charcoal and let it burn 10–15 minutes, until the coals are ashed over and glowing white hot. Rake them into a single even layer for direct heat and set a cast iron skillet over the top to preheat for 2–3 minutes.
Crumble the country sausage into the hot skillet and cook, breaking it up as you go, until well browned — about 5 minutes.
Add the chopped potatoes, bell pepper and 2 tablespoons of the butter. Cook for 8 minutes, stirring every couple of minutes, until the potatoes are tender and starting to crisp at the edges.
Stir in the red onion and cook 2 minutes more, then add the last tablespoon of butter and let it melt and sizzle through everything.
Flatten the mixture into an even layer, crack the eggs on top and cook for about 5 minutes, until the whites are set. Cover the skillet if you want the yolks firmer. Scatter over the cheddar and chives, let the cheese melt for a minute, then pull the skillet off the coals and serve straight from the pan.
Chef's tips
Chop the sausage, potatoes, peppers and onion at home and pack them in a sealed container or zip bag so camp prep is just cooking.
Cut the potatoes small — no bigger than 1/2 inch — or they won't cook through in 8 minutes over coals.
Cast iron holds heat hard over a fire. If the potatoes are browning too fast, slide the skillet half off the coals rather than lowering the heat.
No charcoal? Burn hardwood down to a bed of coals and cook over those, or set the skillet on a camp stove over medium heat.
