Instructions

  1. Marinate the chicken: In a bowl, whisk the vegetable oil, lime juice, chili powder, cumin, smoked paprika, oregano, garlic, 1 1/4 tsp salt and pepper. Add the chicken thighs and turn to coat. Let sit at room temperature 20 minutes (or refrigerate up to 8 hours).
  2. Make the rice: Combine the rinsed rice, water and 1/2 tsp salt in a small saucepan. Bring to a boil, cover, reduce to the lowest heat and cook 15 minutes. Remove from heat and rest, covered, 10 minutes. Fluff with a fork, then stir in the lime juice, cilantro and olive oil. Spread on a plate to cool slightly — hot rice steams tortillas from the inside and makes them tear.
  3. Cook the chicken: Heat a grill pan or heavy skillet over medium-high until it smokes lightly, 3–4 minutes. Cook the thighs 5–6 minutes per side, until deeply charred in spots and 175°F at the thickest point. Rest 5 minutes on a board, then chop into 1/2-inch pieces. Do not add the juices from the board to the filling — save them for drizzling on the plate.
  4. Warm the beans: In a small skillet over medium heat, warm the black beans with the 1/2 tsp cumin and 2 tablespoons water for 3–4 minutes, mashing about a quarter of them against the pan so they bind. Season with salt and keep warm. Drain off any loose liquid before filling.
  5. Prep the tortillas: Warm each tortilla directly in a dry skillet over medium heat for 20–30 seconds per side, until flexible and steaming but not crisp. Stack them under a clean kitchen towel. A cold tortilla cracks at the fold — a warm one stretches.
  6. Build for the fold: Lay a warm tortilla flat. Sprinkle 1/2 cup cheese in a horizontal band across the lower third, leaving a bare 2-inch border on the left, right and bottom edges. On top of the cheese, layer 1/2 cup rice, 1/3 cup beans, a quarter of the chicken, 1/4 cup drained pico, 2 tablespoons sour cream, a few avocado slices and lettuce if using. Keep the filling a compact log about 5 inches long and no more than 2 inches tall — overfilling is the number one cause of blowouts.
  7. Fold it: Fold the bottom edge up and over the filling, then pull it back toward you firmly to compress the log tight. Fold both side flaps in over the ends, pressing them flat against the filling so nothing can escape sideways. Keeping tension with your thumbs, roll the whole bundle forward once, then again, so the tortilla's outer edge finishes underneath. Set it seam-side down while you build the rest.
  8. Toast to seal: Wipe the skillet clean and heat over medium — no oil. Place burritos seam-side down and press gently with a spatula. Toast 2–3 minutes until the seam is golden and welded shut, then turn and toast the second side 2 minutes. Rotate onto each long side for 30 seconds each to set the edges. The tortilla should be tan-spotted, dry and firm enough to hold in one hand.
  9. Rest 2 minutes so the cheese sets and grips the filling, then cut on a sharp diagonal with a serrated knife. Serve with the reserved chicken juices, extra salsa and sour cream.
