Whole black urad dal and a handful of kidney beans go soft and silky in the pressure cooker in 45 minutes instead of soaking overnight and simmering all day. From there it's a lazy, low-heat braise with tomato, ginger, butter and cream — stirred often, mashed against the side of the pot — until the dal turns glossy and almost sweet. An optional charcoal smoking trick gives you the tandoor edge that restaurant versions have.

Instructions

  1. Rinse the urad dal and kidney beans in several changes of cold water until the water runs almost clear. No soaking needed if you're pressure cooking, but a 30-minute soak in hot tap water while you prep will make the beans creamier — drain before using.
  2. Add the dal, kidney beans, 5 cups water, minced ginger, 1 teaspoon salt, baking soda and bay leaf to a 6-quart Instant Pot. Seal, set to Pressure Cook / Manual on High for 45 minutes, then let the pressure release naturally for at least 20 minutes (do not quick-release — the starchy liquid will spit). On a stovetop pressure cooker, cook 30 minutes at high pressure and let it cool down on its own.
  3. Check the beans: a urad dal grain should collapse completely between your fingers and the kidney beans should be soft all the way through with no chalky center. If not, pressure cook another 10 minutes. Fish out the bay leaf. Do not drain — the cloudy cooking liquid is the body of the dish.
  4. While the dal cooks, make the masala. In a large heavy pot or Dutch oven over medium heat, melt 4 tablespoons butter with the oil. Add cumin seeds, cinnamon, cardamom and cloves and let them sizzle for 30 to 45 seconds until fragrant.
  5. Add the onion and cook, stirring often, 8 to 10 minutes until deeply golden at the edges. Add the grated ginger, garlic and slit chile and cook 90 seconds more, until the raw garlic smell is gone.
  6. Stir in the Kashmiri chile powder, coriander, cumin and turmeric and toast for 20 seconds, then immediately add the crushed tomatoes and 1 1/4 teaspoons salt. Cook over medium heat, stirring, for 12 to 15 minutes — you want the mixture thick and jammy, pulling away from the sides of the pot, with butter visibly separating at the edges. This step is where the flavor lives; don't rush it.
  7. Scrape the cooked dal and all of its liquid into the masala pot. Add 1 cup water, stir well, and bring to a bare simmer. Lower the heat to the lowest setting that still gives you an occasional lazy bubble.
  8. Simmer uncovered for 60 to 90 minutes, stirring every 10 minutes and scraping the bottom. Every few stirs, press the back of a wooden spoon or a potato masher against the dal along the side of the pot to break up some of the grains — this thickens it naturally. Add 1/4 to 1/2 cup hot water whenever it gets thicker than a loose gravy. It's ready when the color has darkened to a deep chocolate-brown and the dal coats the spoon in a glossy sheet.
  9. Stir in the heavy cream, garam masala, and the kasuri methi (crush it between your palms as you add it). Taste and add the sugar only if the tomatoes taste sharp. Simmer 10 more minutes on low.
  10. Turn off the heat. Drop in the cold cubed butter and swirl the pot gently rather than stirring hard — the dal will turn visibly silkier. Taste and adjust salt.
  11. Optional smoke: hold the charcoal piece in tongs directly over a gas burner (or on a grill) until it's glowing red, 4 to 5 minutes. Set a small metal bowl on top of the dal, drop the coal in, spoon the ghee over it, and cover the pot the instant it starts smoking. Leave sealed for 3 to 4 minutes, then remove the bowl and coal and stir.
  12. Serve hot, topped with chopped cilantro, julienned ginger and a small extra drizzle of cream, alongside naan, roti or jeera rice.
