3/4 cup passion fruit purée or nectar, chilled
1 1/4 cups aged Jamaican rum
1 1/4 cups aged Barbados or Spanish-style dark rum
2 teaspoons Angostura bitters, plus more for serving
1 1/2 cups cold still water or chilled brewed black tea
1/4 cup overproof rum, for floating (optional)

1 large ice block (see step 1)
1 whole nutmeg, for grating
2 limes, sliced into thin wheels

Instructions
Make the ice block at least 8 hours ahead: fill a 6-cup plastic food container, loaf pan, or small mixing bowl with filtered water and freeze until solid, 6–8 hours. A single large block melts far slower than cubes and is the difference between punch that stays punchy and punch that turns to juice.
Make the oleo-saccharum: using a vegetable peeler, remove the zest from 8 limes in wide strips, taking as little white pith as possible. Put the peels in a bowl or quart jar with the demerara sugar and muddle or squeeze them together for a full minute to bruise the peels. Cover and leave at room temperature 1 hour minimum, or refrigerate overnight — the sugar will draw out a heavily perfumed syrup.
Stir the oleo-saccharum until the sugar has mostly dissolved into the collected oils. If any sugar remains gritty, add 1–2 tablespoons hot water and stir 30 seconds more. Strain through a fine-mesh sieve into a large pitcher, pressing hard on the peels to get every drop; discard the peels.
Juice the peeled limes plus 1–2 extra to get 3/4 cup fresh lime juice. Strain out the pulp and add it to the pitcher with the syrup, stirring to combine.
Add the pineapple juice, passion fruit purée, both aged rums, and the Angostura bitters. Stir well, then add the cold water or chilled tea. Taste: it should be bracing and tart with the sugar just behind the fruit. Adjust with a splash more water if it feels hot, or a tablespoon of lime juice if it feels sweet.
Refrigerate the punch at least 1 hour and up to 24 hours before serving — a cold start means less dilution in the bowl and a noticeably rounder flavor.
To serve, unmold the ice block (run the outside of the container under warm water for 15 seconds) and set it in a 4- to 5-quart punch bowl. Pour the chilled punch over it. Float the overproof rum across the top with a spoon, if using, and add 6–8 dashes of Angostura bitters over the surface.
Grate a generous cloud of fresh nutmeg over the whole bowl, then float the lime wheels, pineapple spears, and mint sprigs. Ladle into small cups over one cube of ice each, and grate a little more nutmeg over every cup as you pour.
Chef's tips
Rum blending matters more than rum price: one funky pot-still Jamaican rum plus one smooth aged column-still rum gives depth that a single bottle can't. Avoid spiced rum, which brings vanilla sweetness that flattens the punch.
For a pitcher instead of a bowl, halve everything and build it in a 2-quart pitcher with a tall ice spear frozen in an empty juice carton.
Non-alcoholic version: replace both aged rums with 2 cups strong brewed and chilled black tea plus 1/2 cup unsweetened coconut water, and add 1 extra teaspoon bitters (or 1/2 teaspoon vanilla extract for a fully alcohol-free bowl). Keep the oleo-saccharum — it does most of the flavor work.
Passion fruit purée lives in the freezer aisle near the Latin ingredients; frozen concentrate works, just thaw first. If you can only find sweetened passion fruit nectar, cut the demerara sugar to 3/4 cup.
