A skillet of tortilla chips layered with melty taco cheese, jalapeños, tomatoes and olives, cooked right over the coals until everything is molten. It feeds a whole campsite from one pan and takes about 15 minutes.

  1. Get your campfire down to steady medium heat with glowing coals, or set a grill to medium (about 350°F). Scatter a third of the tortilla chips across the bottom of a 10.5-inch cast iron skillet.
  2. Top that layer with a third of the cheese, then half the olives, half the tomatoes, half the jalapeños and half the green onions.
  3. Add another third of the chips and another third of the cheese. Finish with the last of the chips, the last of the cheese, and the remaining olives, tomatoes, jalapeños and green onions.
  4. Tent the skillet loosely with foil — don't crimp it tight, you want a little steam to escape. Set it over the fire or grill and cook for 10 to 15 minutes, until the cheese is fully melted and bubbling at the edges.
  5. Lift off the foil, shower with cilantro, and bring the skillet straight to the table with salsa, guacamole and sour cream alongside. Eat while it's hot and stringy.
