Instructions
Heat the oven to 400°F (200°C). Melt the butter in a 10- to 12-inch oven-safe skillet over medium heat, then sprinkle in the flour and whisk constantly for 1 minute until it smells toasty and looks like a smooth paste.
Pour in the milk and chicken broth a splash at a time, whisking after each addition so no lumps form. Cook, whisking often, for 4 to 5 minutes until the sauce thickens enough to coat the back of a spoon.
Turn the heat to low and stir in the shredded chicken, frozen corn, frozen peas, salt and a pinch of pepper. Cook for 2 to 3 minutes just to heat the vegetables through, then stir in the cheddar until melted and smooth. Take the skillet off the heat.
