Instructions

  1. Make the aioli first so it can sit: whisk the mayonnaise, grated garlic, olive oil, lemon juice, and a pinch of salt in a small bowl until smooth. Cover and refrigerate at least 20 minutes (up to 3 days) so the garlic mellows into the base.
  2. Make the brava sauce: heat 3 tablespoons olive oil in a small saucepan over medium. Add the onion and cook 6–8 minutes until soft and translucent but not browned. Add the garlic and cook 1 minute more.
  3. Pull the pan off the heat and stir in both paprikas and the flour — off-heat keeps the pimentón from scorching and turning bitter. Return to medium-low, stir in the tomato paste, and cook 1 minute until it darkens slightly.
  4. Whisk in the chicken broth in a steady stream, bring to a simmer, and cook 8–10 minutes until the sauce coats a spoon like thin gravy.   6. While the potatoes dry, build the board. Set the aioli and brava sauce bowls plus a small empty bowl for olive pits on a large board or platter first, then fan the jamón, chorizo, and lomo in loose folds around them. Place the cheese wedges at the corners with the membrillo and honey beside them.
  7. Fill the gaps: turn the tinned tuna, boquerones, and mussels out into small dishes or leave them in their opened tins on the board, then tuck in the olives, piquillos, guindillas, marcona almonds, and dried figs. Leave one clear zone about 8 inches wide for the hot potatoes.
  8. Toast the bread: brush the slices with 2 tablespoons olive oil and broil or grill 1–2 minutes per side until golden. Rub each hot slice once with the cut garlic clove and pile in a basket alongside the picos.
  9. Fry the potatoes: heat 4 cups neutral oil in a deep heavy pot or Dutch oven to 375°F (use a thermometer; keep the oil no more than a third of the way up the pot).
