Instructions
Lay 2 slices of bread on a board. Onto each, stack 2 slices of cheddar and 1 slice of American cheese, then top with the remaining bread to close the sandwiches.
Spread the softened butter over the outside of the sandwiches — about ½ tablespoon per face, so 1 tablespoon per sandwich. Cover the bread right to the edges so it browns evenly.
Set both sandwiches in a large cold skillet, then turn the heat to medium-low and cover with a lid. The gentle start gives the cheese time to melt before the bread colours.
Cook covered for 5 to 10 minutes, until the underside is deeply golden. Lift a corner with a spatula at the 5-minute mark to check, and nudge the heat lower if it's browning fast.
Flip the sandwiches and cook, still covered, for another 3 to 4 minutes. This side moves quicker now that the pan is hot, so watch it — you want golden bread and cheese that's fully molten.
