Valencia's tiny two-tone coffee: a pool of sweetened condensed milk in the bottom of a clear glass with a hot espresso floated on top so the two stay stubbornly separate until you stir. Instructions
Choose the glasses first: two small, straight-sided, heatproof glasses of 4 to 6 oz (espresso or shot glasses, or small Turkish tea glasses). Narrow and clear is what makes the layers read. Fill them with boiling water and let them stand 2 minutes to preheat, then pour the water out and dry the insides quickly with a towel — a cold glass chills the espresso and blurs the line between layers.
Spoon 1 1/2 tablespoons of sweetened condensed milk into the bottom of each warm glass, dropping it straight down the center so none smears up the sides. Tilt and tap the glass on the counter once or twice so the milk settles into a flat, level pool.
Set the glasses on a folded towel next to your machine. Pull a double shot of espresso for each glass — 20 g of finely ground dark roast to about 2 oz (60 ml) of liquid in 25 to 30 seconds — into a warmed pitcher or cup, not directly into the glass. Let the shot sit for 15 to 20 seconds so the wildest bubbles fall.
No espresso machine? Brew 4 oz of very strong coffee in a 3-cup moka pot over medium heat (pull it off the burner the second it starts sputtering), or press 20 g of coffee with 4 oz of 205°F water in an AeroPress for 90 seconds. Strong and hot is what matters; drip coffee is too thin to layer well.
Now the pour. Hold a teaspoon just above the condensed milk with the rounded back facing up and the tip touching the inside wall of the glass. Pour the espresso onto the back of the spoon in a slow, thin stream — take a full 15 to 20 seconds for 2 oz — so it fans out and slides down the glass wall instead of drilling into the milk. Stop when the glass is about 1/2 inch from the rim. Repeat with the second glass.
Look for a clean horizontal line: opaque pale milk on the bottom, dark coffee above, with a thin caramel-colored band where they meet. If the layers muddied, you poured too fast or the milk pool wasn't level — it will still taste right, and the next one will be sharper.
Optional foam cap: froth 2 tablespoons of whole milk to 150°F and spoon a 1/4-inch layer of microfoam on top, then dust with cinnamon. Serve immediately with a long spoon and a small glass of water, and tell people to stir it into one caramel-colored drink before the first sip — it is aggressively sweet on the bottom and bitter on top until they do.
Chef's tips
Ratio is the whole recipe: equal volumes of condensed milk and espresso. If you find it too sweet, drop to 1 tablespoon of milk against 2 oz of coffee rather than adding water — diluting the coffee kills the layering.
Iced version: put 1 1/2 tablespoons of condensed milk in a small clear glass, add 3 or 4 ice cubes, then pour the espresso slowly over the back of a spoon onto the ice. The ice slows the stream for you, so the layers come out even cleaner.
Warm the condensed milk for 10 seconds in the microwave if it's straight from a cold fridge — a stiff cold pool sits fine, but a slightly loosened one levels out flatter and gives a crisper line.
Use a dark roast with chocolate or nut notes. Bright, fruity light-roast espresso fights the caramel of the condensed milk instead of leaning into it.
