Sweet-salty white miso glaze lacquers salmon fillets while broccoli florets char at the edges in the same basket. Everything cooks in one go in about 15 minutes, so dinner is done before the rice cooker beeps.
Ingredients
Glaze
3 tbsp white miso paste
2 tbsp honey
2 tbsp soy sauce
2 tsp toasted sesame oil
Basket
4 fillets skin-on salmon fillets (about 6 oz each)
1 lb broccoli, cut into small florets
2 scallions, thinly sliced
2 tsp toasted sesame seeds
Instructions
Preheat the air fryer to 400°F for 3 minutes. Meanwhile, whisk the miso, honey, soy sauce, and sesame oil in a small bowl until smooth and pourable; it should look like loose caramel.
Toss the broccoli florets in a bowl with 1 tablespoon of the glaze until lightly coated. Spread them in the hot basket in a single layer and air fry at 400°F for 5 minutes, shaking once, until the edges start to brown.
Push the broccoli to the outer edges of the basket and nestle the salmon fillets in the center, skin-side down, leaving a little space between them. Brush the tops and sides of the fish generously with half the remaining glaze. Air fry at 400°F for 7 minutes.
Brush the salmon with the last of the glaze and cook 2 to 4 minutes more, until the glaze is bubbling and darkened in spots and the thickest part of the fish reads 125–130°F on an instant-read thermometer (it should flake when nudged with a fork).
Lift the salmon and broccoli onto plates, spoon over any glaze pooled in the basket, and scatter with the sliced scallions and sesame seeds. Serve right away.
Chef's tips
Honey and miso scorch fast, so glaze in two passes rather than all at the start — the second coat gives you the shiny finish without bitterness.
If your fillets are thin (under 1 inch), check at 6 minutes; salmon carries over a few degrees while you plate.
No broccoli? Green beans, halved baby bok choy, or thick asparagus spears all work on the same timing.
Line the basket with a perforated parchment round if your air fryer runs sticky, but skip solid foil — the glaze needs airflow to caramelize.
