Instructions
Pat the pork belly very dry with paper towels and cut it into 1-inch cubes. In a bowl, toss the cubes with the brown sugar, smoked paprika, garlic powder, salt, and pepper until every piece is coated.
Preheat the air fryer to 380°F for 3 minutes. Pour 2 tablespoons of water into the drawer beneath the basket (this catches the rendering fat and stops it smoking), then arrange the pork in a single layer with a little space between cubes. Work in two batches if your basket is small.
Air fry at 380°F for 12 minutes. Pull the basket out, shake or turn the cubes with tongs, and carefully drain off the rendered fat from the drawer. Return and cook another 10 to 12 minutes, until the pork is deep golden and crisp at the edges.
