Heat the oven to 350°F. Line an 8x8-inch pan with two crossed strips of parchment, letting them overhang the sides so you can lift the slab out later.
Spread the oats, chopped almonds and pepitas on a rimmed sheet pan in an even layer. Toast 10–12 minutes, stirring once at the 6-minute mark, until the oats smell like toast and the almonds are golden inside when you snap one. Add the sesame seeds for the final 2 minutes only — they scorch fast. Slide the pan onto a rack to cool for 10 minutes, then dump into a large bowl with the kosher salt and cinnamon and toss.
While the oats toast, put the pitted dates in a heatproof bowl, pour over the 1/2 cup boiling water, and let them soak 10 minutes until slumped and soft. Drain, reserving the soaking liquid.
Transfer the drained dates to a food processor with 2 tablespoons of the reserved liquid. Process 60–90 seconds, scraping the bowl twice, until you have a thick, smooth, glossy paste with no visible chunks. If it stalls, add reserved liquid 1 teaspoon at a time — you want the texture of soft caramel, not a purée.
In a small saucepan over medium-low heat, melt the butter with the almond butter and maple syrup, whisking until smooth and pourable, about 2 minutes. Do not let it boil. Off the heat, stir in the vanilla, then scrape in the date paste and stir hard until fully combined and uniform in color, about 30 seconds.
Pour the warm date mixture over the toasted oats and fold with a sturdy spatula until every oat is coated and no dry pockets remain — this takes a full minute of firm mixing and the mass should clump when squeezed in your fist. If it feels crumbly, add reserved date water 1 teaspoon at a time.
Scrape into the lined pan. Lay a sheet of parchment on top and press down hard with the flat bottom of a measuring cup or glass, working from the center out to the corners. Compaction is what keeps the bars from crumbling, so press until the surface is dense, flat and shiny — about a minute of real pressure.
If glazing, melt the chocolate with the neutral oil in a bowl set over 1 inch of barely simmering water, stirring until smooth, then pour over the slab and spread thin with an offset spatula. Scatter the flaky salt over the top while the chocolate is still wet.
Refrigerate uncovered for at least 2 hours, or until completely firm and cold through.
Lift the slab out by the parchment onto a cutting board. Using a long, sharp knife, cut in half, then cut each half into 6 bars, wiping the blade between cuts for clean edges. Serve cold or at room temperature.
Chef's tips
Medjool dates are worth it here — Deglet Noor dates are drier and more fibrous and will give you a grainier paste. If Deglets are what you have, soak them 20 minutes instead of 10.
No food processor? Soak the dates 20 minutes, then mash them to a paste against the side of the bowl with a fork or the back of a sturdy spoon. It takes about 4 minutes and won't be quite as smooth, which is fine.
Cut and wrap the bars individually in parchment or wax paper. They keep 2 weeks in a sealed container in the fridge, or 3 months frozen — a frozen one thaws in a lunchbox by mid-morning.
For energy bites instead of bars, skip the pan: roll the warm mixture into 1 1/4-inch balls (about 24), then chill 30 minutes to set.
Keep quick oats out of this. They absorb the binder too fast and go pasty; you need the chew of old-fashioned rolled oats.
