One tray, one oven, dinner sorted. Baby potatoes get a head start until their edges turn crisp and golden, then green beans and honey-harissa glazed salmon join them for the last stretch. The glaze caramelises onto the fish and drips down into the potatoes, and a squeeze of lemon at the table pulls it all together. Nothing to boil, nothing to pan-fry, and one pan to wash.

750 g baby potatoes, halved (quartered if large)
4 tbsp olive oil
1 tsp fine salt
1/2 tsp black pepper
1 tsp dried oregano
350 g green beans, trimmed
4 fillets skin-on salmon fillets (about 150 g each)
Glaze and finish
2 tbsp harissa paste
1 tbsp honey
2 cloves garlic, finely grated
1 whole lemon, half juiced and half cut into wedges
3 tbsp chopped fresh parsley
Instructions
Heat the oven to 220°C / 425°F. On a large rimmed sheet pan, toss the halved baby potatoes with 2 tbsp of the olive oil, 1/2 tsp of the salt, the pepper and the oregano. Spread them cut-side down in a single layer and roast for 20 minutes.
While the potatoes roast, stir together the harissa, honey, grated garlic, 1 tbsp olive oil and a pinch of the salt in a small bowl. Pat the salmon fillets dry and season them with the remaining salt.
Pull the tray out and, using a spatula, press down firmly on each potato half to crush it slightly so the flat edges will crisp. Push the potatoes to one long side of the pan. Toss the green beans with the last 1 tbsp olive oil and scatter them into the cleared space.
Nestle the salmon fillets skin-side down among the beans and spoon the honey-harissa glaze thickly over the top of each fillet. Return to the oven and roast for 12 to 14 minutes, until the salmon flakes easily at its thickest point and the beans are blistered in spots.
Squeeze the lemon half over the whole tray, scatter with parsley and serve straight from the pan with the lemon wedges.
Chef's tips
Salmon fillets vary a lot in thickness — start checking at 10 minutes for thin tail pieces, and give thick centre-cut fillets the full 14.
No harissa? Use 1 tbsp tomato paste plus 1/2 tsp smoked paprika and a pinch of chilli flakes for a milder but still smoky glaze.
Line the pan with baking paper if you like, but the potatoes crisp best straight on the metal — just oil it well.
Swap the green beans for broccoli florets or asparagus; both go in at the same stage.
