A two-ingredient Roman sauce that lives or dies on temperature control. Cracked peppercorns are toasted dry then bloomed in starchy pasta water, and the Pecorino Romano is whisked into a smooth paste with warm — never boiling — water before it ever touches the pan. The result is a glossy, clinging, aggressively peppery sauce with zero stringy cheese clumps. Makes enough to coat 1 pound of pasta.

  1. Coarsely crack the peppercorns: put them in a zip-top bag and press hard with the bottom of a heavy skillet, or pulse in a mortar. You want gravelly, uneven pieces — not fine powder and not whole. Fine pepper turns muddy; whole pepper gives you nothing.
  2. Toast the pepper in a dry 12-inch skillet over medium heat, shaking constantly, for 60 to 90 seconds, until it smells sharp and floral and you can feel it in the back of your throat. Slide the pepper onto a plate and set the skillet aside.
  3. Bring 3 quarts water to a boil in a pot (deliberately less water than usual — you want it starchy) and add only 1 1/2 teaspoons kosher salt. Add the pasta and cook, stirring often, until 1 minute shy of al dente.
  4. While the pasta cooks, grate the Pecorino (and Parmigiano, if using) as finely as you possibly can on a rasp-style grater — this is the single biggest anti-clump variable. Toss the grated cheese with the cornstarch, if using.
  5. When the pasta is about 4 minutes from done, ladle 1/2 cup pasta water into a measuring cup and let it sit for 2 minutes to drop to roughly 130–140°F (hot to the finger, not scalding). Pour it over the cheese a few tablespoons at a time, whisking hard, until you have a smooth, thick, spreadable paste with no dry pockets. If it's stiff as spackle, add another tablespoon of water.
  6. Return the skillet to medium heat. Melt the butter, add the toasted pepper, and let it sizzle 30 seconds. Add 3/4 cup pasta water and simmer 1 to 2 minutes, until it looks like a slightly thickened, jet-black-flecked broth. Turn off the heat.
  7. Reserve another 1 1/2 cups pasta water, then drain the pasta and add it directly to the skillet along with any clinging water. Toss with tongs for 45 to 60 seconds off the heat — the pasta finishes cooking in the pepper broth and, just as importantly, the pan drops below 170°F, the temperature above which Pecorino breaks and strings.
  8. Add the cheese paste all at once and toss fast and continuously for about 1 minute, lifting and folding the pasta. The sauce will look loose, then suddenly turn creamy and cling to the strands. Loosen with reserved pasta water 2 tablespoons at a time until it flows like heavy cream — it tightens as it sits, so err on the saucy side.
  9. Taste and add salt only if needed. Serve immediately in warmed bowls with a final shower of Pecorino and a grind of pepper. Cacio e pepe does not wait; plate it the moment it comes together.
