Instructions
Build your fire early so you have a bed of glowing coals with no flames by the time you cook — you want steady medium heat, roughly the same as a 350°F oven. If you're on a camp stove or grill instead, set it to medium.
Mix the ground beef with the onion soup mix in a large bowl until the seasoning is evenly worked through, then divide into 6 equal portions and shape each into a patty. Set them aside on a plate.
In another bowl, toss the quartered potatoes, frozen carrots and diced red onion with the olive oil, garlic powder, salt, pepper and smoked paprika until everything is glossy and coated.
Tear six 12x18-inch sheets of heavy-duty foil and grease the centre of each with cooking spray or a smear of oil. Pile one-sixth of the vegetables in the middle of each sheet, set a patty on top, then bring the long edges of the foil together and fold to seal into a snug pouch with a little air space inside.
Set the packets directly on the coals or grill grate and cook 45 to 50 minutes, turning them once halfway with tongs, until the potatoes are tender and the patties register at least 160°F. Open carefully away from your face, lay a slice of Colby Jack over each patty, fold the foil loosely back over and give it 5 minutes for the cheese to melt before serving.

Double-wrap each packet if you're cooking straight on coals — a single layer tears easily and a split pouch means ash in your dinner.
Cut the potatoes no larger than 1 inch so they finish at the same time as the beef; anything chunkier will still be crunchy at 45 minutes.
Assemble the packets at home and keep them in a cooler until you cook — that's the whole prep done before you leave.
Tuck a pat of butter or a splash of Worcestershire in with the vegetables before sealing if you want a richer, saucier packet.
