1.5 lb boneless skinless chicken breast, cut into 1-inch cubes

Instructions
Rinse the jasmine rice, then cook it with 2 1/4 cups water in a covered saucepan: bring to a boil, drop to the lowest heat and simmer 12 minutes, then rest off the heat, lid on, for 10 minutes and fluff with a fork.
While the rice cooks, pat the chicken cubes dry, put them in a bowl with the cornstarch and 1/2 teaspoon salt, and toss until every piece is lightly and evenly coated.
In a small bowl, whisk together the honey, soy sauce, rice vinegar, grated garlic and 2 tablespoons water. Set it next to the stove.
Heat the vegetable oil in a large nonstick skillet over medium-high heat. Add the chicken in a single layer and cook undisturbed for 4 minutes, then turn the pieces and cook 4 to 5 minutes more, until golden all over and cooked through (165°F inside). Transfer to a plate.
Add the broccoli and 1/4 cup water to the same skillet, cover, and steam over medium heat for 4 minutes, until bright green and just tender enough to cut with a fork. Uncover and let any remaining water cook off, about 30 seconds.
Return the chicken to the pan, pour in the sauce, and stir over medium heat for 1 to 2 minutes until it thickens and coats everything in a shiny glaze. Sprinkle with sesame seeds and spoon over the rice.
Chef's tips
Cut the chicken into even 1-inch cubes so nothing dries out — smaller pieces also feel less daunting to little eaters.
If your kids prefer very soft broccoli, steam it a minute longer with the lid on; if they like it crunchier, pull it at 3 minutes.
The sauce thickens fast because of the cornstarch on the chicken. If it gets too sticky, loosen it with a tablespoon of water.
