A cool, crunchy chickpea chaat you assemble entirely with a knife and a bowl — no pan, no kettle, no heat of any kind. Canned chickpeas get lightly crushed so they soak up lime and chaat masala, then everything is piled over a tangy mint yogurt and showered with shop-bought sev for crunch. Ten minutes of chopping gets you a light supper or a big sharing snack.

Instructions

  1. In a small bowl, whisk the Greek yogurt with three-quarters of the chopped mint, the juice of half a lime, 1/2 teaspoon of the salt and 1/2 teaspoon of the chaat masala. Whisk in 2–3 tablespoons cold water, a spoonful at a time, until it is pourable like thick cream. Cover and leave in the fridge for at least 10 minutes so the mint flavours it.
  2. Thinly slice the red onion and drop the slices into a bowl of cold water for 5 minutes to soften their raw bite, then drain well and pat dry on kitchen paper.
  3. Drain and rinse the chickpeas under cold water, shake dry, tip into a large bowl and crush about a third of them roughly with a fork so they drink up the dressing. Dice the cucumber and tomatoes into 1 cm pieces (scoop out and discard any very watery tomato seeds).
  4. Add the cucumber, tomato and drained onion to the chickpeas along with the juice of the remaining 1 1/2 limes, the remaining 1 1/2 teaspoons chaat masala and the remaining 1/2 teaspoon salt. Toss well and taste, adding more lime or chaat masala until it is sharp and savoury.
  5. Spread the mint yogurt over a wide serving platter or divide between 4 bowls, pile the chaat on top, drizzle with any leftover yogurt, then scatter over the sev and the reserved mint. Serve straight away, while the sev is still crisp.
