The whole point of squeezing your own is that it tastes like fruit, not concentrate — bright, faintly floral, with just enough pulp to feel alive. The trick is blending two kinds of oranges (juicy Valencias for sweetness and body, a couple of blood oranges or tangerines for perfume and color), keeping every drop of bitter peel oil out of the glass, and getting it cold fast. No sugar, no water, no blender. Squeeze, strain to the pulp level you like, chill, drink within the hour.

  1. Taste first. Cut one orange in half and squeeze a spoonful into a glass. If it's sweet and juicy, proceed as written. If it's watery or sour, plan to use more of the blood oranges/tangerines and hold the optional honey in reserve. Discard nothing — this test half gets squeezed with the rest.
  2. Bring the fruit to room temperature (about 68–70°F) if it's been in the fridge, roughly 30 minutes on the counter. Cold fruit gives up noticeably less juice. Rinse and dry the oranges, then roll each one firmly under your palm on the counter for 5–10 seconds to break down the internal segments.
  3. Set a fine-mesh sieve over a large measuring cup or pitcher. Halve the oranges through the equator (not pole to pole) with a serrated knife so the segments are cut open and release freely.
  4. Squeeze the halves on a citrus reamer, hand press, or a manual lever juicer, directly into the sieve. Press firmly but stop when the pulp goes pale and dry — grinding the white pith and rind releases bitter compounds. Do not let the cut peel sit soaking in the juice, and never scrape peel oil in with a zester. You should get about 3 1/2 to 4 cups of juice total.
  5. Stir the pulp in the sieve gently with a spoon to let the good juice through. For classic juice-bar texture, push about half the pulp through and discard the stringy membrane left behind. For pulp-free, don't press at all — just let it drain 2 minutes and lift the sieve away. For extra pulp, dump the whole sieve in and stir.
  6. Taste and adjust: a pinch of fine sea salt (barely 1/16 teaspoon for the whole batch) makes the sweetness pop, 1 teaspoon lemon juice restores brightness to sleepy fruit, and a teaspoon of honey rescues underripe oranges — whisk any honey with 1 tablespoon of the juice first so it dissolves.
  7. Chill fast: cover and refrigerate 20–30 minutes, or set the pitcher in a bowl of ice water and stir for 5 minutes. Serve at 38–40°F in chilled glasses, stirring right before pouring since fresh juice separates within minutes. Drink within 1 hour for peak flavor; it holds well-covered for up to 24 hours in the fridge, though it loses aroma.
