Make the rich syrup: combine the cane sugar and water in a small saucepan over medium heat. Stir until the sugar fully dissolves and the liquid turns clear, 3 to 5 minutes — do not let it boil hard or reduce. Cool to room temperature, then funnel into a clean jar. It keeps 3 weeks refrigerated and pours noticeably thicker than standard simple syrup.
Put two coupe or small martini glasses in the freezer for at least 20 minutes. A truly cold glass is the difference between a great daiquiri and a merely good one.
Roll the limes firmly under your palm on the counter, halve them, and juice them right before mixing. Strain the juice through a fine mesh sieve to catch pulp and seeds. Measure 2 oz. Do not use juice that has been sitting more than 2 hours — it goes flat and bitter fast.
Build in a cocktail shaker: 4 oz white rum, 2 oz fresh lime juice, 1 oz rich cane syrup, and a tiny pinch of salt if using. Swirl once to combine.
Add 3 large ice cubes plus 1 smaller cube or a small handful of cracked ice — the small piece breaks up and gives you the chill and aeration you want. Seal the tin.
Shake hard, over your shoulder, for 12 to 15 seconds, until the outside of the tin is painfully cold and lightly frosted. You are looking for a shake loud enough that someone in the next room hears it.
Double-strain immediately: pour through the shaker's strainer and a fine mesh sieve into the chilled glasses, dividing evenly (about 3 1/2 oz each). A fine, pale foam should settle on top within a few seconds.
Cut a 2-inch strip of lime peel, twist it skin-side down over each glass to spray the oils across the foam, then rub the rim and either drop it in or discard. Serve at once — a daiquiri has about a four-minute window.

Rum choice is the whole drink. A clean Spanish-style white rum gives a soft, elegant daiquiri; adding 1/2 oz of Jamaican white rum (in place of the same amount of the base) brings banana-and-grass funk that makes it taste like a bar version. Avoid heavily filtered bottom-shelf rum — there's nothing to taste behind the lime.
Rich 2:1 syrup is used at half the volume of standard 1:1 syrup. If you only have regular simple syrup, use 3/4 oz per drink instead of 1/2 oz, and expect a slightly thinner texture.
Limes vary. Taste before you strain: if the drink reads sour and sharp, add 1/8 oz syrup and re-shake for 3 seconds. If it's flabby, add 1/8 oz lime.
Skip freezer-tray ice with hollow centers if you can — it melts too fast and over-dilutes. One tray of cubes frozen from hot water, or store-bought 1-inch cubes, shakes far better.
For a crowd, pre-batch: combine 8 parts rum, 4 parts lime juice, 2 parts rich syrup and 1 1/2 parts cold water in a bottle, chill in the freezer for 2 hours, then pour 4 oz per chilled glass — no shaking needed.
For a frozen version, blend one batch (4 oz rum, 2 oz lime, 1 1/4 oz rich syrup) with 2 cups ice on high for 30 seconds until slushy and pale, and serve in chilled glasses with short straws.
