Instructions
In a large bowl, whisk the yogurt, ginger garlic paste, garam masala, chili powder, salt and oil into a thick, smooth paste that clings to a spoon.
Add the paneer cubes and the pepper and onion pieces. Fold gently with a spatula so every piece is coated without breaking the paneer, then leave to sit at room temperature for 15 minutes.
Preheat the air fryer to 400°F (200°C) for 3 minutes. Lift the paneer and vegetables out of the bowl, letting thick excess marinade drip back, and spread them in a single loose layer in the basket. Cook in two batches if your basket is small — crowding steams instead of chars.
Air fry for 12 minutes total, pulling the basket at the 6-minute mark to shake or turn the pieces. They are done when the marinade looks dry and rust-red with blackened edges and the onion is softened but still has bite.
Tip everything onto a platter, let it rest 2 minutes so the paneer firms up, and serve hot with warm naan or rice.
