Return to the oven and roast 12 to 15 minutes more, until the sweet potatoes are tender and the chicken registers 175°F (80°C) at the bone.
Brush the chicken with the last of the glaze and broil 2 to 3 minutes, watching closely, until the skin is deep mahogany and sticky. Remove immediately if it darkens faster.
Let the pan rest 5 minutes. Spoon the glossy pan juices over the chicken and vegetables, scatter with sliced scallions, and serve straight from the tray with rice if you like.

Cut the sweet potatoes no larger than 1 inch so they finish in the same time as the chicken — bigger wedges will still be firm.
Crowding steams instead of roasts: use the biggest sheet pan you own, or split everything across two pans on two racks.
No baby bok choy? Use 1 lb broccoli florets or halved Brussels sprouts, added at the same stage.
