Divide into 8 portions and press each into a patty about 3 inches wide and 1/2 inch thick, packing the edges firmly so they don't crack. Set them on a plate and chill 10 minutes while the pan heats (this helps them hold their shape).
Heat 2 tablespoons of the oil in a large skillet, preferably cast iron, over medium heat until it shimmers. Add 4 cakes and fry, undisturbed, 4 minutes per side, until deeply golden and crisp and hot all the way through.
Transfer to a paper-towel-lined plate, add the remaining 2 tablespoons oil to the pan, and cook the second batch the same way, 4 minutes per side. Sprinkle the hot cakes with a little salt.
