A seasoned beef patty steams over potatoes, carrots and onion inside a sealed foil packet, finished with melty Colby Jack. One packet per person, no pans to scrub.

1 pound baby potatoes, halved
3 large carrots, sliced into 1-inch pieces
1/2 onion, sliced
2 tablespoons olive oil
1 tablespoon Italian seasoning

1 pound lean ground beef
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
salt and pepper, to taste
To Finish
1 cup shredded Colby Jack cheese
Instructions
Tear four large sheets of heavy-duty aluminium foil and lay them out flat. If you only have regular foil, double it up so the packets don't tear on the coals.
In a bowl, toss the halved baby potatoes, carrot pieces and sliced onion with the olive oil and Italian seasoning until everything is coated. Pile an even quarter of the mix into the centre of each foil sheet.
Mix the ground beef with the garlic powder, onion powder and a good pinch of salt and pepper, then shape into four flat patties. Set one patty on top of the vegetables in each packet.
Bring the long sides of the foil up to meet, fold them over together, then fold in the ends to seal tightly — you want the steam trapped inside.
Set the packets on a grill grate or directly on the hot coals of your fire and cook 30–45 minutes, turning once halfway, until the potatoes pierce easily and the beef is cooked through (160°F/71°C). Open carefully away from your face, scatter the Colby Jack over the top, and close the foil for 2 minutes to melt.
Chef's tips
Cut the potatoes small and no thicker than the carrots — they're the slowest thing in the packet and dictate the cook time.
Coals, not flames. Rake a bed of embers to one side and cook there; open fire scorches the foil before the potatoes are done.
Long tongs and a pair of gloves make turning the packets painless. Pull one packet early to test doneness before you serve the rest.
Everything can be assembled at home and kept in a cooler, so all you do at camp is unstack and cook.
