A thick steak with a dark, crusted exterior and a rosy medium-rare centre, cooked in a single air fryer basket in about seven minutes. Melted butter brushed on before cooking does the browning work for you, and unpeeled garlic cloves in the basket perfume the whole thing.
Ingredients
2 steaks, 8–10 oz each (striploin or ribeye)
salt and freshly ground black pepper
2 tbsp butter (or high-heat oil)
4 cloves garlic, unpeeled (optional)
Instructions
Season both steaks generously all over with salt and pepper, then leave them on the counter for 30 minutes. Room-temperature meat cooks far more evenly and the salt has time to work its way in.
Drop the unpeeled garlic cloves into the air fryer basket, then preheat the air fryer to 400°F for 3 minutes. A properly hot basket is what gives you a crust instead of grey meat.
While it heats, melt the butter in the microwave in 20-second bursts, about 40 seconds total. Brush it over both sides of each steak.
Lay the steaks in the hot basket, positioned as high up and as close to the heating element as your air fryer allows, and cook at 400°F for 7 minutes without flipping for medium-rare. Add about 2 minutes for medium, or pull them a minute early for rare.
Move the steaks to a board and rest for a full 5 minutes before slicing against the grain. Squeeze the softened garlic out of its skins and serve alongside.
Chef's tips
Pat the steaks completely dry with paper towel before seasoning — surface moisture steams instead of browns.
An instant-read thermometer takes the guesswork out: 130°F at the centre for medium-rare, 140°F for medium, remembering it climbs a few degrees as it rests.
Thin steaks under an inch will overcook at these times. Look for steaks at least 1 to 1½ inches thick.
Cook one steak at a time if your basket is small — crowding traps steam and you lose the crust.
