Grate all the cheese on the large holes of a box grater and toss the cheddar, mozzarella, and American together in a bowl so the blend is even. Let it sit at room temperature for 10 minutes while you set up — cold cheese straight from the fridge is the single biggest cause of an unmelted center.
Lay the 4 bread slices on a cutting board. Spread a thin, edge-to-edge layer of mayonnaise on one side of each slice (about 2 teaspoons per slice). Flip two of the slices mayo-side down; if using, spread a whisper of Dijon on the dry face.
Pile the cheese blend onto the two dry faces, mounding it slightly in the center and pushing a little all the way to the crust edges. Top with the remaining slices, mayo-side up. Press gently so the sandwiches hold together.
