Cubes of salmon soak in a quick soy, honey and sesame marinade, then crisp up in the air fryer with sticky caramelised edges. Dinner in about 15 minutes, with almost nothing to wash up.

12 oz salmon fillets, skin removed
Marinade
2 tablespoons low-sodium soy sauce
2 teaspoons honey
1 teaspoon rice vinegar
1/2 teaspoon toasted sesame oil
1 clove garlic
1 small cube fresh ginger

sesame seeds, sliced green onions and sriracha mayo, to serve
Instructions
Pull the skin off the salmon and feel for any stray bones, then cut the fillets into generous 1-inch cubes so they cook evenly.
In a bowl or lidded container, stir together the soy sauce, honey, rice vinegar and sesame oil, then grate in the garlic clove and the cube of ginger. Mix until the honey dissolves.
Add the salmon cubes and turn them gently until every piece is coated. Let them sit for 10 minutes at room temperature, or cover and chill for up to a few hours if you're ahead of yourself.
Preheat the air fryer to 390°F. Spray the basket lightly with oil and lay the salmon in a single layer, leaving a little space between each piece so they roast rather than steam.
Air fry for 5–8 minutes, flipping halfway and brushing the pieces with the leftover marinade — pull them at 5 minutes for just-set centres, 8 for fully firm. Scatter with sesame seeds and green onion and drizzle with sriracha mayo before serving.
Chef's tips
Don't crowd the basket. If the pieces touch they release steam and you lose the sticky, caramelised edges — cook in two batches if you need to.
Pat the salmon dry before it goes into the marinade; drier surfaces pick up more glaze and brown faster.
These are excellent over rice with cucumber and avocado for a quick salmon bowl, and the leftover marinade brushed on at the halfway flip is where most of the flavour lands.
