Instructions

Set up your smoker for indirect cooking at 250°F (120°C) and add the apple wood chunks to the coals or wood tray. Wait until the smoke runs thin and blue, not white and billowing, before the chicken goes on.

For crisper skin, open the vents or add a few coals to bring the smoker to 350°F (175°C) and cook 10 minutes more, turning once.
Rest the drumsticks on a platter for 5 minutes, then scatter with cilantro and serve with lemon wedges to squeeze over.

Apple wood is mild and slightly sweet, which suits the spices; cherry works the same way. Skip hickory or mesquite here — they bully the garam masala.
No smoker? A charcoal kettle works: bank the coals to one side, set the chicken on the cool side, drop a wood chunk on the coals, and hold the vents at roughly 250°F.
Whole-milk yogurt clings and browns; low-fat versions run off the chicken and can scorch. Greek yogurt thinned with a tablespoon of water is a good substitute.
