Everything a low-country boil tastes like, done in one air fryer basket in under 20 minutes. Smoked sausage and sweet peppers crisp first, then shrimp go in for the last few minutes so they stay plump and juicy. 12 oz andouille or smoked sausage, sliced into 1/2-inch coins
2 bell peppers, cut into 1-inch pieces
1 red onion, cut into 1-inch wedges
1 lb large shrimp, peeled and deveined
2 tbsp olive oil
2 tsp Cajun seasoning
To finish
2 tbsp butter, cut into small pieces
1 lemon, halved
Instructions
Preheat the air fryer to 400°F (200°C) for 3 minutes. Meanwhile, toss the sausage coins, bell peppers and red onion with 1 tablespoon of the olive oil and 1 teaspoon of the Cajun seasoning.
Tip the sausage and vegetables into the basket and cook at 400°F (200°C) for 8 minutes, pulling the basket out to shake it once at the 4-minute mark.
While that cooks, toss the shrimp with the remaining 1 tablespoon olive oil and 1 teaspoon Cajun seasoning until evenly coated.
Scatter the shrimp over the sausage and peppers, shake the basket to settle everything into one layer, and cook 6 to 7 minutes more at 400°F (200°C), shaking once halfway, until the shrimp are pink, opaque and curled and the sausage edges are browned.
Scatter the butter over the hot contents of the basket, squeeze over the juice of half the lemon and toss right in the basket until the butter melts into a glossy sauce. Tip into a bowl and serve with the remaining lemon in wedges.
Chef's tips
Buy shrimp of a similar size (21/25 count works well) so they finish at the same moment; smaller shrimp need only 4 to 5 minutes.
If your basket is small, cook in two rounds rather than crowding — piled-up food steams instead of browning, and the sausage won't crisp.
Cajun seasonings vary a lot in salt. Taste before adding any extra salt at the end, and use a salt-free blend if you want more control.
