1 can (15 oz) chickpeas, drained and rinsed
2 medium zucchini, cut into 3/4-inch half-moons
2 cups cherry tomatoes
1 small red onion, cut into thin wedges
4 cloves garlic, thinly sliced
4 tbsp olive oil
2 tbsp za'atar
1 1/4 tsp kosher salt
1/2 tsp black pepper

4 fillets (6 oz each) skin-on salmon fillets
1 large lemon, half sliced into thin rounds, half for juice
1/2 cup feta, crumbled
Instructions
Heat the oven to 425°F (220°C) with a rack in the upper third. Pat the chickpeas very dry with a towel — this is what lets them crisp instead of steam.
On a large rimmed sheet pan, toss the chickpeas, zucchini, cherry tomatoes, red onion and sliced garlic with 3 tablespoons olive oil, 1 tablespoon of the za'atar, 1 teaspoon salt and the black pepper. Spread into a single even layer, pushing the vegetables to the edges of the pan.
Roast for 15 minutes, until the onion edges are browned and the tomatoes are just starting to split.
Meanwhile, pat the salmon dry and rub it all over with the remaining 1 tablespoon olive oil, the remaining 1 tablespoon za'atar and 1/4 teaspoon salt. Pull the pan out, quickly stir the vegetables, then clear four spaces and nestle the fillets in skin-side down, laying a lemon round on each one.
Return the pan to the oven and roast 10 to 12 minutes, until the thickest part of the salmon flakes at the edges and reads 125–130°F (52–54°C) on an instant-read thermometer. Squeeze the remaining lemon half over the whole pan, scatter with feta, and serve straight from the tray.
Chef's tips
Use one big pan (about 13x18 inches) rather than crowding a small one — crowded vegetables steam and stay pale.
If your salmon fillets are thin (under 1 inch), give the vegetables 18 minutes first so everything finishes together.
Skinless salmon works fine; just watch it closely and pull it at 125°F so it stays juicy.
Swap the zucchini for broccoli florets or halved baby potatoes in cooler months — give potatoes 25 minutes of head start instead of 15.
