Instructions
In a large bowl, whisk the olive oil, juice of 1 lemon, grated garlic, oregano, salt and pepper. Add the pork cubes and toss to coat. Cover and refrigerate at least 30 minutes, or up to 8 hours.
Make the cucumber yogurt: squeeze the grated cucumber firmly in your hands over the sink to remove excess water, then stir it into the yogurt with the dill and a pinch of salt. Refrigerate until serving.
Heat a gas grill to medium-high (about 450°F) with all burners on, or light a charcoal grill and spread the coals in an even layer once they are ashed over. Scrape the grates clean and oil them well.
Thread the pork onto 8 metal or soaked wooden skewers, alternating a few onion wedges among the cubes and leaving a small gap between pieces so they char rather than steam.
Grill the skewers directly over the heat for 12 to 15 minutes total, turning every 3 to 4 minutes, until deeply browned on all sides and the pork reads 145°F on an instant-read thermometer. Move any flare-up skewers to a cooler edge of the grill. Rest on a platter for 5 minutes.
While the skewers rest, lay the pitas on the grill for 30 to 45 seconds per side until puffed and lightly charred. Serve the skewers with the pita, cucumber yogurt and lemon wedges for squeezing.
Chef's tips
Pork shoulder is the right cut here — loin or tenderloin dries out over live fire. Ask the butcher for a piece with visible fat marbling.
Soak wooden skewers in water for 20 minutes so they don't burn through before the pork is done.
No pita? Grill thick slices of country bread brushed with olive oil for 1 minute per side instead.
