Juicy, well-seasoned beef meatballs that brown up in the air fryer in about 12 minutes, no skillet and no splattered stovetop. Spear them with toothpicks for a snack or simmer them into tomato sauce for pasta night.
Ingredients
1 pound ground beef
1/4 cup breadcrumbs
1 large egg
2 teaspoons Worcestershire sauce
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon mustard powder (optional)
1/4 teaspoon salt, plus plenty of freshly ground black pepper
oil spray
Instructions
Heat the air fryer at 380°F (193°C) for 5 minutes while you mix the meat.
In a large bowl, combine the ground beef, breadcrumbs, egg, Worcestershire sauce, onion powder, garlic powder, mustard powder if using, salt and a generous amount of black pepper. Mix with your hands just until everything is evenly distributed — stop as soon as it comes together so the meatballs stay tender.
Lightly oil your hands and roll the mixture into 12 even meatballs, each a heaping 1/8 cup (a medium cookie scoop makes this fast and uniform).
Spray the air fryer basket or tray with oil and arrange the meatballs in a single layer with a little space between them, working in batches if your basket is small. Mist the tops with oil.
Air fry at 380°F (193°C) for 8 minutes, then turn each meatball and spray again if they look dry. Cook another 2–4 minutes, until browned and cooked through (165°F/74°C at the center). Serve on toothpicks, or slide them into warm tomato sauce for pasta, rice or a sandwich.
Chef's tips
Crowding is the enemy of browning — leave gaps so hot air can circulate, and cook in two batches if needed. The first batch stays hot in a covered bowl.
Roll one test meatball, cook it for 10 minutes, then taste and adjust the salt before shaping the rest.
Wet or lightly oiled hands keep the mixture from sticking and give you smoother, rounder meatballs.
Freeze shaped raw meatballs on a tray, then bag them. Air fry from frozen at 380°F, adding about 4 minutes.
