Instructions
Make the Dough
- Make dough from butter, flour, sugar, salt, yeast, and milk. The mixer will beat the dough for about 5 minutes.
- Cover the dough and let it rest in the refrigerator for 30 minutes.
- Roll out the dough into a 14×10-inch rectangle using a clean ruler or measuring tape.
- Cover the rolled out dough and chill it for 4 hours or overnight.
Make the Butter Layer
- Start with softened butter, beat it with flour so it has some stability, then spread into a rectangle and chill it.
Laminating Process
- Enclose the butter layer inside the dough.
- Roll out the dough into another large rectangle, then fold it back together.
- Roll out the dough again, fold it back together again.
- Roll out the dough one more time, fold it back together.
Shape and Bake
- Shape the croissants.
- Apply egg wash made from 1 large egg and 1 tablespoon milk or heavy cream.
- Bake until golden brown, extra flaky, crisp on the outside, and soft on the inside.
Chef's tips
- If at any point the dough becomes too warm, stop and place it back in the refrigerator for 20 minutes to maintain proper lamination.
- Use a ruler or measuring tape throughout the process - precision is crucial for creating perfect layers in croissant dough.
- The laminating process creates 81 layers through just 3 folds - start with 3 layers, fold into thirds three times to achieve this incredible flaky texture.
